What will I need to make this lightened up peanut butter parfait?

This lighter version of a peanut butter parfait is made with sugar free pudding, fat free cool whip, and delicious graham crackers. You’ll need some peanut butter as well.

If you want to cut out about half the points in this recipe you can use peanut butter powder (PB2, Jif Powder, etc.) Prepare it as directed on the package so that you have enough to use for the recipe!

What are some variations of a peanut butter parfait?

If you prefer full fat cool whip and regular instant pudding those will work just fine in this recipe. We use vanilla pudding, but you can use any pudding your prefer.

We have tried this recipe with chocolate pudding and banana pudding is a great option, too.

Don’t be afraid to change up the candy bar toppings. You can use candy or candy bars you choose. It’s really good with peanut M&M’s on top!

If you need to lower points you can substitute Jell-O Vanilla Sugar Free & Fat Free Instant Pudding & Pie Filling Mix, 1.5 oz box for the regular instant pudding size.

You can make this into one large parfait in a trifle dish or you can make these into single servings with small glasses or plastic cups!

What is the best type of peanut butter to use for a peanut butter parfait?

Because most of the layers of this dessert are smooth creamy peanut butter is normally the preference. If you want to add a crunch to your layers, chunky peanut butter can be substituted. Or you can even use half creamy and half chunky for a completely different texture.

How many points are in this peanut butter parfait?

This Weight Watchers peanut butter parfait has 8 points on each of the three myWW+ plans. That does not include peanut butter cups on top. Those would be more depending on which brand, kind, size, etc.

As with all recipes if you make even small changes or use different brands the points could be different. This recipe is calculated with 12 servings of 1/2 cup each.

As I mentioned above you can cut this down to 4 points on each plan per serving by using powdered peanut butter instead of creamy regular peanut butter.

Peanut Butter Parfait For Weight Watchers!

Ingredients

  • 6 cups prepared vanilla or chocolate pudding, sugar free
  • 8 oz cool whip thawed
  • 1 cup peanut butter
  • 18 whole graham crackers crushed
  • PB cups for garnish (optional)

Instructions

  1. Beat prepared pudding and 1 cup of peanut butter until smooth
  2. Fold in 4 oz of cool whip
  3. Allow the mixture to chill for 30 mins
  4. During this time you can crush the graham crackers and prepare your individual cups or large bowl
  5. Then layer graham crackers, pudding mix, graham crackers, pudding
  6. Top mixture with a dollop of cool whip & garnish with chocolate bars, syrup or sprinkles if you like.
