Calling all thirsty preggos slash mojito-drinking, citrus-loving, all things sweet, cold, and fizzy-fanatics! Today I’m sharing the recipe you’ll be drinking all summer long – Sparkling Mint Limeade – plus a light and luscious pizza dinner to go with it.

As you may know, I’ve been on a Chick-fil-A lemonade kick this entire pregnancy (only 8.93593 weeks to go, but who’s counting?) The tartness. The sweetness. The CRUSHED ICE. Needless to say I cannot get enough, which is why I decided to make its twisted sister at home so I can enjoy a frosty glass anytime I want. Limeade, friends, spiked with mint and BUBBLES. Forget the drive through, all you need is 4 everyday ingredients to make Sparkling Mint Limeade at home.

Real talk, the first time I took a sip of this yummy drink I did an awkward jig in my kitchen over how perfect it is. Super tart, just sweet enough, a hint of minty mojito flavor – all poured over a frosty glass of crushed ice. Refreshing to the max. I will be drinking these ALL summer long.

Crispy crust, creamy sauce, cheesy toppings – so, so tasty. Truly I would never know this was frozen – it tastes exactly like thegluten-free pizzas I used to get from small, local pizza shops (which I don’t eat at anymore for fear of cross contamination) except I can keep it on hand to eat whenever a craving strikes. I am so thrilled to have this pizza in my life!

How to Make Sparkling Mint Limeade

All you do is combine 3/4 cup fresh lime juice (5-6 limes) 1/2 cup + 2 Tablespoons white sugar, plus 1/4 cup packed fresh mint in a measuring cup.

Whisk the ingredients together until the sugar has dissolved, semi-muddling the mint in the process, then refrigerate until chilled. The longer the mixture sits in the fridge, the more the mint flavor will come through.

When you’re ready to drink, strain the mixture into a pitcher through a fine mesh sieve to remove the mint then slowly stream in 2-1/2 cups club soda – aka the “sparkle” in Sparkling Mint Limeades!

Description

Sparkling Mint Limeade is the ultimate thirst quencher! Sweet, tart, and fizzy, you'll love this refreshing mocktail recipe.

Ingredients

makes 4, 8oz drinks

  • 3/4 cup fresh lime juice (5-6 limes), plus extra slices for garnish
  • 1/2 cup + 2 Tablespoons white sugar
  • 1/4 cup packed fresh mint, plus extra for garnish
  • 2-1/2 cups club soda (not seltzer or mineral water)

Directions

  1. Combine lime juice, sugar, and mint in a 2 cup (or larger) measuring cup then stir until sugar is dissolved, muddling mint in the process. Refrigerate until chilled (the longer you refrigerate, the more mint flavor you will taste in the final drink.)
  2. Pour the lime/mint mixture through a fine mesh strainer into a pitcher then slowly pour in club soda and stir gently. Pour limeade into 8oz glasses filled with ice then serve with extra limes and mint.
