Thank you for these, I made the pumpkin/oat/chocolate bars and they were easy and amazing. I used date sugar instead of brown and cut up a dark chocolate bar for the chips. Yum! Please keep the vegan recipes coming, I am loving all of them!

I can’t wait for Pinterest to go back to being a bit more diverse instead of 90% pumpkin related. I love me a bit of the squash family and it’s great that it can be used in such a variety of ways, but everything in moderation. We have it roasted with a Sunday lunch if anything here, or in a soup, but never sweet! Unless it’s a gluten-free cake or something but even then it’s unusual.

What about savoury recipes! I love it roasted with sage and lots of salt and garlic. Then you can have it with just about anything – pasta, sausages, roast chicken :)

i made pumpkin zucchini bread on sunday :) i’m not at all pumpkin-crazy but it was just the right amount of sweet + savory and took advantage of the zillions of squash still at our farmer’s market! that pumpkin meringue pie does look beautiful, though.

I am not an enormous pumpkin fan, but these double chocolate pumpkin cookies were seriously life-changing (they still have the texture of a regular cookie, instead of being basically a cupcake top).
