Cream – the cream is used to help the chocolate melt without sticking and make the homemade fudgejust thatlittle bitcreamier. You can use any cream you like – heavy cream, double cream or whipping cream, for example. Or, you could swap to coconut milk if you’d prefer instead.
Butter – I usedunsalted butter to create the creamiest fudge. Remove fromthe fridge for a few hours to soften at room temperature. For a salted, cultured flavor you could use salted butter instead, in the low carb recipe.
Cream Cheese – use a whole 200g tub ofcream cheeseto create a decadently creamy fudge to enjoy as a low-carb dessert.
Stevia – you can use stevia, monk fruit sweetener, a sugar substitute or whatever low carb friendly sweeteners you like in this keto-friendly fudge recipe to keep it low in grams of carbs, it really depends on what you like to useand your own dietary requirements.

- 100g/3.5 ounces Dark Chocolate
- 2 Tablespoons Cream
- 50g/1.76 ounces Butter, softened
- 200g/7 ounces Package Cream Cheese, softened
- 1/4 Cup Stevia or Sugar Free Powdered Sugar
- Line a smallairtight container, square panorloaf panwith well greased baking parchment paper.
- Melt chocolate and cream together, either over low heat on the stove top, in a double boiler or in 30 second intervals in the microwave, until melted.
- Remove the melted chocolate from the heat and allow to cool.
- In a large bowl, combine the softenedbutter, softenedcream cheeseand stevia.
- Whisk with an electric beater or electric hand mixeruntil the cream cheese mixture has a smooth and creamy texture.
- Add themelted chocolate to the large mixing bowland whisk until the chocolate is fully incorporated and you have a creamy fudge mixture.
- Move the fudge to the prepared container or baking pan, flatten it down to an even layerand place into the fridge for a few hours to harden to creamy keto fudge.
- Once the low carb cream cheese fudge has hardened, cut it into bite sized small pieces or small squares, store in the fridge and enjoy.
